Pickled beets ( and onions )

I pulled up the last of the beetroot and pickled them. I also added onions to the beetroot jars and made just a jar up of the onion. 
I till have a few large onions in the garden that have to be harvested so I'm debating if I should just pickle them as well. Since they are large I just slice them up chunky style. 
I'm thinking they will taste delish with a BBQ or home make fish and chips. 
I'll let you know lol
Now if I can just make sure no one opens these until they are ready

Beetroot relish. ( can't sit still )

I pick the largest of the Beetroot today. And found a relish recipe and set about making some. 
The onions are from the garden too
Here it is cooking away. Boy did it smell good. I've never made this before so I was unsure of how I would go. I used my electric wok and I'm very happy as to how it went. I was able to adjust the heating and as its a nonstick it was very easy to clean 
Here are the jars. It turned into the deepest purple. And I did a taste test and yup it's very delishes.  
Hubby approved as well. So now to let them cool and seal and I'll put them away for use on sandwiches, cold meats, burgers or what ever you want really.

Tomorrow I will do pickled Beetroot as I still have quite a few in the garden. 
The green leaves have been cooked and will be eaten as a salad. So no waste

Sunday again

Hello everyone. I'm sorry I've been mia.
It's been a long tiring week. Last Sunday I decided to Clean the back of the house. After all the construction work and the birds trying to nest. I washed the outside of the whole back of the house.
Bad move!
I got the worst migraine. Haven't had one that bad for a long time. I spent the night being sick the pain was so bad
Luckily I had a massage appointment on the Monday and she put everything back for me. And told me off. Lol
Then Tuesday hubby had his op and I spent the day in the hospital. Those chairs are not the best for someone with chronic pain
Left him there over night and picked him up Wednesday. So two days of long distance driving. As the hospital is an hour away in the country
And looking after hubby while trying to keep the household going
I'm all tuckered out!
But he is getting better. And soon battle to keep him resting will begin. But I'm not thinking about that right now.
So while he is sleeping. I'm just resting. I might go outside and spend time in th garden. Just for therapudic reasons.
I hope to be back as normal soon

Home again

The patient is home again. He had a bad night but lots of pain meds have been administered and they gave us some to bring home
I have made some chicken soup so I'll feed him up drug him up and settle him down for the night early.
It's going to be a long six weeks.

Operation day

Today I'm up early to give hubby a very small breakfast as he has to fast from 7.00am on. 
We are off to warrigal hospital for his hernia operation 
Baby girl is coming with us so i don't have to drive home alone. It's a fair drive from here. 
Wish us luck. Feeling nervous but Will be so glad once it's done as he will be pain free again
I'll let you know how he goes

Quiet mornings

All is calm on the homestead 
I'm sitting outside. The cats are at the back door. The dogs asleep next to me. I can hear the sheep in the paddock. The birds are singing and all is well in my little patch of the world.  
I love sitting outside just listening to the sounds of nature. 
I'm sure things will get hectic  but for now just relaxing and counting my blessings

Drying herbs

Picked my oregano 
Placed them in dryer. 
Now it's going. 
Hope this works. I use a lot of this herb in my cooking

The final wall was pulled out and the area cleaned up. Notice the water tank in this shot 
The new fence was built
The water tank was moved, will be relocated to the shed to provide water for the stock
And the gap left for the eventual building of the fire place. 
The finishing touches hopefully will go on today and then the rest of the back fence replaced. 
And for now I think that's as far as the funds will stretch. Christmas is coming and as hubby will be out of action for at lest six weeks after his hernia operation we will take a break and continue next year. We are just using money we have saved for all this. 
So I'll use the old garden furniture I still have and set it up for Christmas lunch. And hopefully during the year we will slowly finish it off and be able to buy some new tables and chairs. 
But for now I'm a very happy girl. We have accomplished lots and from where our yard was to now is a huge change.

My new chair

Got this at Aldi today. At less than half price than those at the outdoor furniture shops. I've always wanted one but they were so expensive and I really had nowhere to put it 
The instructions came on a leaflet instead of just a sheet. We were a bit worried but hubby did it 
Ta da. Isn't it cute. This will go out the back under the new area when it's done. I love it and it's so comfy 
Very happy I am

General maintenance and something for fun

The fly screens have small holes that bella made into big ones. So new mesh was purchased and hubby is busy installing them
A new seat is needed the old one had a crack in it and it's getting harder to clean. 
And these were an impulse buy. Only $20.00. No wires solar so I could do it all myself 
Here they are assembled and charging in the sun. They change colours so I'm sure they will look nice while we are out enjoying the dusk. 
Now all we need is nice weather so we can open our windows and enjoy the lights

Yesterday I was in a lot of pain. I could understand why because I really haven't been over doing. Then last night it began to rain, and rain and this morning it's still raining. 
Don't you love it when your body is better at telling the weather than the weatherman 
It's nice it raining. A steady constant fall. It's giving my garden some much needed moisture and I'm sure everything is really enjoying it 
Except for me.  I'm in bed with pain. 
Oh well gotta accept the good with the bad I guess.

Taking shape

Putting the sheets of corrugated iron on today. My sewing room is so much cooler now 
Half done. It's a huge job 
All done. Just the flashing to be put on. But now it's got  a roof it looks even bigger oh my! 
The builder told me to plant lots of roses to hid this side of the fence. But I had other ideas. Remember my screens I got. 
Ta da! We need to add more mulch so it will hid the bottom. And I'll plant one more rose in that big gap. Can never have too many roses I say. I love the way it looks. 
Well what do you think? Only one more wide to do. And that's where the fireplace is going to get built. So next job. The concrete slab for th fireplace then the brickie can come and do his bit. And then the final fence. 
Then I get to pretty it up lol 
I'm very happy.
